The degree of esterification of LMC pectin is less than 50%, usually between 30% and 50%. Since the amount of methoxy groups is relatively low, the number of carboxyl groups is sufficient to constitute the formation of "calcium bridge" crosslink, thereby increasing the viscosity of the system and forming a gel.
